Cool, crisp and tasty simple summer salads are great for this time of year, wherever you are.
It’s my first summer in the South and yes, I’m feeling the humidity. Coming from Arizona, I’ve experienced 120 degrees. Let me tell you — both kinds of heat stink! I’m trying to get used to things being drippy and not drying as fast as I want. I’m loving grilled meats right now and am always looking for good sides that can double as lunch for the next day. Here are 5 salads from Tastefully Simple that are rocking my tastebuds in my kitchen.
Avocado & Corn Salad: This is a zesty fresh mix of fire roasted diced tomatoes, corn, pinto beans (you could sub black or other kinds of beans too), and avocado, green pepper. It also can double as a dip for corn or tortilla chips. Get the recipe here.
Summer Quinoa Salad: This salad has the added protein from the quinoa and is a great side with grilled salmon or chicken. In addition to the quinoa, it’s filled with summer veggies — tomatoes, cucumbers, sweet corn and avocado. It’s dressed with Avocado oil — while I suppose you could use other oils, consider getting avocado oil if it isn’t in your pantry. It’s a healthy fat and has a high smoke point with no flavor added. Orzo Citrus Salad: This one had me at goat cheese….I do love it, adds a great tang along with the mandarin oranges, arugula (or spinach), orzo pasta (if you’re not familiar, it looks kind of like rice), and a bit of shallot and olive oil. Yum! Pair with your favorite grilled meat; you may want to pair this with a grilled citrus herb chicken. Here’s the salad recipe; here’s the chicken bonus!
